Ingredients

  • 1 cup heavy whipping cream, whipped to stiff peaks

  • 1 cup whipped cream
  • 1/2 cup toasted shredded coconut
  • Pandan leaves (optional)
  • White chocolate shavings (optional)


Instructions

  1. Combine the cookie crumbs, toasted coconut, sugar, and melted butter until evenly moistened.
  2. Press the mixture firmly into a parchment-lined 8×8-inch baking pan. Refrigerate for 20 minutes.
  3. Beat the cream cheese until smooth and creamy.
  4. Add the sweetened condensed milk, pandan extract, vanilla extract, and coconut cream. Beat until fully combined.
  5. Gently fold the whipped cream into the pandan mixture until light and fluffy.
  6. Spread the filling evenly over the chilled crust and smooth the top.
  7. Cover and refrigerate for at least 6 hours or overnight until fully set.
  8. Spread the whipped cream over the bars.
  9. Sprinkle generously with toasted coconut.
  10. Garnish with pandan leaves and white chocolate shavings if desired.
  11. Slice into bars and serve chilled.
