Ingredients
- For the Peach Syrup:
- 2 cups ripe peaches, diced
- 1/4 cup granulated sugar
- 1/4 cup water
- 1 tablespoon lemon juice
- For the Cream Filling:
- 16 oz mascarpone cheese, softened
- 8 oz cream cheese, softened
- 3/4 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 1/2 cups heavy whipping cream, whipped to stiff peaks
- For Assembly:
- 24 ladyfinger cookies
- 3 cups fresh peaches, thinly sliced
- For Garnish:
- Whipped cream
- Fresh peach slices
- White chocolate shavings (optional)
- Fresh mint leaves (optional)
Instructions
- In a saucepan, combine the diced peaches, sugar, water, and lemon juice. Simmer over medium heat for 8-10 minutes until the peaches soften.
- Strain the mixture, reserving the syrup and allowing it to cool completely. Reserve the cooked peaches.
- Beat the mascarpone and cream cheese together until smooth and creamy.
- Add the powdered sugar and vanilla extract and mix until fully incorporated.
- Gently fold the whipped cream into the mascarpone mixture until light and fluffy.
- Quickly dip each ladyfinger into the cooled peach syrup and arrange a layer in the bottom of a 9×13-inch dish.
- Spread one-third of the mascarpone cream over the ladyfingers.
- Top with half of the reserved cooked peaches and half of the fresh sliced peaches.
- Repeat the layers, finishing with the remaining mascarpone cream.
- Decorate with whipped cream, fresh peach slices, white chocolate shavings, and mint if desired.
- Cover and refrigerate for at least 6 hours, preferably overnight, before serving.
