Description

Peaches & Cream Tiramisu is a refreshing no-bake summer dessert featuring delicate ladyfingers soaked in a light peach syrup, layered with a luscious mascarpone cream and juicy fresh peaches. Finished with whipped cream and peach slices, this elegant twist on classic tiramisu is light, fruity, and perfect for warm-weather entertaining.


Ingredients

  • For the Peach Syrup:
  • 2 cups ripe peaches, diced
  • 1/4 cup granulated sugar
  • 1/4 cup water
  • 1 tablespoon lemon juice
  • For the Cream Filling:
  • 16 oz mascarpone cheese, softened
  • 8 oz cream cheese, softened
  • 3/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 1/2 cups heavy whipping cream, whipped to stiff peaks
  • For Assembly:
  • 24 ladyfinger cookies
  • 3 cups fresh peaches, thinly sliced
  • For Garnish:
  • Whipped cream
  • Fresh peach slices
  • White chocolate shavings (optional)
  • Fresh mint leaves (optional)


Instructions

  1. In a saucepan, combine the diced peaches, sugar, water, and lemon juice. Simmer over medium heat for 8-10 minutes until the peaches soften.
  2. Strain the mixture, reserving the syrup and allowing it to cool completely. Reserve the cooked peaches.
  3. Beat the mascarpone and cream cheese together until smooth and creamy.
  4. Add the powdered sugar and vanilla extract and mix until fully incorporated.
  5. Gently fold the whipped cream into the mascarpone mixture until light and fluffy.
  6. Quickly dip each ladyfinger into the cooled peach syrup and arrange a layer in the bottom of a 9×13-inch dish.
  7. Spread one-third of the mascarpone cream over the ladyfingers.
  8. Top with half of the reserved cooked peaches and half of the fresh sliced peaches.
  9. Repeat the layers, finishing with the remaining mascarpone cream.
  10. Decorate with whipped cream, fresh peach slices, white chocolate shavings, and mint if desired.
  11. Cover and refrigerate for at least 6 hours, preferably overnight, before serving.
