- 1 cup heavy whipping cream, whipped to stiff peaks
- 1/2 cup toasted shredded coconut

- Whipped cream
- Fresh pineapple chunks
- Toasted shredded coconut
- Fresh mint leaves (optional)

Instructions
- In a bowl, combine the well-drained crushed pineapple, granulated sugar, and lemon juice. Refrigerate while preparing the mousse.
- Beat the softened cream cheese until smooth and creamy.
- Add the coconut cream, sweetened condensed milk, vanilla extract, and coconut extract if using. Beat until fully combined.
- Fold the whipped cream gently into the coconut mixture until light and fluffy.
- Fold in the toasted shredded coconut.
- Divide half of the pineapple mixture among serving glasses or dessert cups.
- Spoon or pipe the coconut mousse over the pineapple layer.
- Top with the remaining pineapple mixture or gently swirl it into the mousse.
- Cover and refrigerate for at least 4 hours, or until well chilled and set.
- Before serving, garnish with whipped cream, fresh pineapple chunks, toasted coconut, mint leaves, and lime zest if desired.
