Ingredients

  • For the Pineapple Layer:
  • 2 cups crushed pineapple, well drained
  • 2 tablespoons granulated sugar
  • 1 tablespoon lemon juice
  • For the Coconut Mousse:
  • 8 oz (225g) cream cheese, softened
  • 1 cup coconut cream
  • 1/2 cup sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon coconut extract (optional)
  • 1 cup heavy whipping cream, whipped to stiff peaks
  • 1/2 cup toasted shredded coconut
  • For Garnish:
  • Whipped cream
  • Fresh pineapple chunks
  • Toasted shredded coconut
  • Fresh mint leaves (optional)
  • Lime zest (optional)


Instructions

  1. In a bowl, combine the well-drained crushed pineapple, granulated sugar, and lemon juice. Refrigerate while preparing the mousse.
  2. Beat the softened cream cheese until smooth and creamy.
  3. Add the coconut cream, sweetened condensed milk, vanilla extract, and coconut extract if using. Beat until fully combined.
  4. Fold the whipped cream gently into the coconut mixture until light and fluffy.
  5. Fold in the toasted shredded coconut.
  6. Divide half of the pineapple mixture among serving glasses or dessert cups.
  7. Spoon or pipe the coconut mousse over the pineapple layer.
  8. Top with the remaining pineapple mixture or gently swirl it into the mousse.
  9. Cover and refrigerate for at least 4 hours, or until well chilled and set.
  10. Before serving, garnish with whipped cream, fresh pineapple chunks, toasted coconut, mint leaves, and lime zest if desired.
