Ingredients

  • Fresh raspberries (optional)
  • Edible gold flakes (optional)
  • Fresh mint leaves (optional)


Instructions

  1. Combine the cookie crumbs, melted butter, and granulated sugar until evenly moistened.
  2. Divide the mixture among 8 serving cups and press firmly into the bottoms. Refrigerate for 15 minutes.
  3. Beat the softened cream cheese until smooth and creamy.
  4. Add the pistachio cream, powdered sugar, vanilla extract, and almond extract if using. Beat until fully combined.
  5. Fold the whipped cream gently into the pistachio mixture until light and fluffy.
  6. Fold in the chopped pistachios.
  7. Spoon or pipe the cheesecake filling evenly into the prepared cups.
  8. Refrigerate for at least 4 hours or overnight until fully set.
  9. Just before serving, sprinkle about 1 teaspoon of granulated sugar evenly over each cup.
  10. Using a kitchen torch, carefully caramelize the sugar until golden and crisp. Allow it to cool for 1-2 minutes to harden.
  11. Garnish with chopped pistachios, fresh raspberries, edible gold flakes, and mint if desired before serving.
