Ingredients

- 1/4 cup finely chopped roasted pistachios
- For the Crème Brûlée Topping:
- 1/4 cup granulated sugar (about 1 teaspoon per cup)
- For Garnish:
- Chopped roasted pistachios
- Fresh raspberries (optional)
- Edible gold flakes (optional)
- Fresh mint leaves (optional)
Instructions
- Combine the cookie crumbs, melted butter, and granulated sugar until evenly moistened.
- Divide the mixture among 8 serving cups and press firmly into the bottoms. Refrigerate for 15 minutes.
- Beat the softened cream cheese until smooth and creamy.
- Add the pistachio cream, powdered sugar, vanilla extract, and almond extract if using. Beat until fully combined.
- Fold the whipped cream gently into the pistachio mixture until light and fluffy.
- Fold in the chopped pistachios.
- Spoon or pipe the cheesecake filling evenly into the prepared cups.
- Refrigerate for at least 4 hours or overnight until fully set.
- Just before serving, sprinkle about 1 teaspoon of granulated sugar evenly over each cup.
- Using a kitchen torch, carefully caramelize the sugar until golden and crisp. Allow it to cool for 1-2 minutes to harden.
- Garnish with chopped pistachios, fresh raspberries, edible gold flakes, and mint if desired before serving.
