Description

Raspberry White Chocolate Mousse is a light, elegant no-bake dessert featuring silky white chocolate mousse layered with fresh raspberry puree. Rich yet airy, this creamy dessert is finished with whipped cream, fresh raspberries, and white chocolate curls, making it perfect for holidays, dinner parties, or summer entertaining.


Ingredients

  • For the Raspberry Puree:
  • 2 cups fresh or frozen raspberries
  • 1/4 cup granulated sugar
  • 1 tablespoon lemon juice
  • For the White Chocolate Mousse:
  • 8 oz (225g) white chocolate, finely chopped
  • 1 cup heavy whipping cream (for melting chocolate)
  • 8 oz (225g) cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 1/2 cups heavy whipping cream, whipped to stiff peaks
  • For Garnish:
  • Fresh raspberries
  • Whipped cream
  • White chocolate curls or shavings
  • Fresh mint leaves (optional)
  • Freeze-dried raspberry crumbs (optional)


Instructions

  1. In a small saucepan, combine the raspberries, granulated sugar, and lemon juice. Cook over medium heat for 5-7 minutes until the berries soften.
  2. Blend the mixture until smooth, then strain through a fine-mesh sieve to remove the seeds. Cool completely.
  3. Heat 1 cup of heavy cream until just simmering. Pour it over the chopped white chocolate and let stand for 2 minutes, then stir until smooth. Allow to cool to room temperature.
  4. Beat the softened cream cheese until smooth and creamy.
  5. Add the powdered sugar and vanilla extract, then mix until combined.
  6. Gradually beat the cooled white chocolate mixture into the cream cheese until smooth.
  7. Gently fold the whipped cream into the white chocolate mixture until light and airy.
  8. Layer or swirl the raspberry puree into serving glasses, followed by the white chocolate mousse. Repeat the layers as desired.
  9. Cover and refrigerate for at least 4 hours, or until well chilled and set.
  10. Before serving, garnish with whipped cream, fresh raspberries, white chocolate curls, mint leaves, and freeze-dried raspberry crumbs if desired.
