Ingredients

  • For the Crust:
  • 2 cups graham cracker or vanilla cookie crumbs
  • 1/2 cup unsalted butter, melted
  • 2 tablespoons granulated sugar
  • For the Raspberry Layer:
  • 2 cups fresh or frozen raspberries
  • 1/4 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon cornstarch mixed with 1 tablespoon water
  • For the White Chocolate Mousse:
  • 8 oz (225 g) white chocolate, finely chopped
  • 1/2 cup heavy cream (for melting chocolate)
  • 8 oz (225 g) cream cheese, softened
  • 8 oz (225 g) mascarpone cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 1/2 cups heavy whipping cream, whipped to stiff peaks
  • For the Topping:
  • 1 cup whipped cream
  • Fresh raspberries
  • White chocolate curls or shavings
  • Fresh mint leaves (optional)


Instructions

  1. Mix the cookie crumbs, melted butter, and sugar until evenly combined.
  2. Press firmly into the bottom of a 9-inch springform pan and refrigerate for 20 minutes.
  3. In a saucepan, cook the raspberries, sugar, and lemon juice over medium heat for 5-7 minutes. Stir in the cornstarch slurry and cook until thickened. Cool completely.
  4. Heat 1/2 cup heavy cream until just simmering. Pour over the chopped white chocolate and let stand for 2 minutes before stirring until smooth. Cool to room temperature.
  5. Beat the cream cheese and mascarpone until smooth.
  6. Add the powdered sugar and vanilla extract and mix until creamy.
  7. Gradually beat in the cooled white chocolate mixture until fully combined.
  8. Fold the whipped cream gently into the mousse mixture until light and fluffy.
  9. Spread half of the white chocolate mousse over the chilled crust.
  10. Spread the cooled raspberry layer evenly over the mousse.
  11. Top with the remaining white chocolate mousse and smooth the surface.
  12. Cover and refrigerate for at least 6 hours, preferably overnight, until firmly set.
  13. Before serving, decorate with whipped cream, fresh raspberries, white chocolate curls, and mint if desired.
