Ingredients
- 1 prepared pizza dough (12-14 inch)
- 1 tablespoon olive oil
- 1 lb breakfast beef sausage, crumbled
- 3 tablespoons unsalted butter
- 3 tablespoons all-purpose flour
- 2 cups whole milk
- 1 teaspoon black pepper
- 1/2 teaspoon salt
- 6 large eggs
- 2 tablespoons milk (for eggs)
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 2 green onions, sliced
- 1 tablespoon chopped fresh parsley
Instructions
- Preheat oven to 425°F (220°C).
- Roll pizza dough into a 12-14 inch circle and place on a pizza pan or baking sheet.
- Brush dough lightly with olive oil and pre-bake for 6-8 minutes.
- In a skillet over medium heat, cook sausage until browned. Remove half for topping and leave the remainder in the skillet.
- Add butter to the skillet and melt.
- Whisk in flour and cook for 1 minute.
- Gradually whisk in milk until smooth and thickened.
- Season with salt and black pepper to create sausage gravy.
- In a bowl, whisk eggs with 2 tablespoons milk.
- Scramble eggs in a nonstick skillet until just set.
- Spread sausage gravy evenly over the pre-baked crust.
- Top with scrambled eggs and reserved sausage.
- Sprinkle cheddar and mozzarella cheese over the top.
- Bake for 10-12 minutes until cheese is melted and bubbly.
- Garnish with green onions and parsley before slicing and serving.
Notes
- Use a pizza stone for a crispier crust.
- Do not overcook the scrambled eggs since they will continue cooking in the oven.
- Add diced bell peppers or jalapeños for extra flavor.
