Ingredients

  • 1 prepared pizza dough (12-14 inch)
  • 1 tablespoon olive oil
  • 1 lb breakfast beef sausage, crumbled
  • 3 tablespoons unsalted butter
  • 3 tablespoons all-purpose flour
  • 2 cups whole milk
  • 1 teaspoon black pepper
  • 1/2 teaspoon salt
  • 6 large eggs
  • 2 tablespoons milk (for eggs)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 2 green onions, sliced
  • 1 tablespoon chopped fresh parsley


Instructions

  1. Preheat oven to 425°F (220°C).
  2. Roll pizza dough into a 12-14 inch circle and place on a pizza pan or baking sheet.
  3. Brush dough lightly with olive oil and pre-bake for 6-8 minutes.
  4. In a skillet over medium heat, cook sausage until browned. Remove half for topping and leave the remainder in the skillet.
  5. Add butter to the skillet and melt.
  6. Whisk in flour and cook for 1 minute.
  7. Gradually whisk in milk until smooth and thickened.
  8. Season with salt and black pepper to create sausage gravy.
  9. In a bowl, whisk eggs with 2 tablespoons milk.
  10. Scramble eggs in a nonstick skillet until just set.
  11. Spread sausage gravy evenly over the pre-baked crust.
  12. Top with scrambled eggs and reserved sausage.
  13. Sprinkle cheddar and mozzarella cheese over the top.
  14. Bake for 10-12 minutes until cheese is melted and bubbly.
  15. Garnish with green onions and parsley before slicing and serving.

  • Use a pizza stone for a crispier crust.
  • Do not overcook the scrambled eggs since they will continue cooking in the oven.
