Smoked Gouda Beef & Rice Bake is a rich and comforting casserole featuring seasoned ground beef, tender rice, smoky Gouda cheese, and a creamy savory sauce baked until bubbly and golden.
Ingredients
- 1 lb ground beef
- 1 tablespoon olive oil
- 1 small yellow onion, diced
- 3 cloves garlic, minced
- 1 cup long-grain white rice, uncooked
- 2 1/2 cups beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon smoked paprika
- 1 teaspoon Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 oz cream cheese, softened
- 2 cups shredded smoked Gouda cheese, divided
- 1/2 cup sour cream
- 2 tablespoons chopped fresh parsley
- 2 green onions, sliced for garnish
Instructions
- Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
- Heat olive oil in a large skillet over medium-high heat.
- Add onion and cook for 3-4 minutes until softened.
- Stir in garlic and cook for 30 seconds until fragrant.
- Add ground beef and cook until browned, breaking it apart as it cooks. Drain excess fat if necessary.
- Season with smoked paprika, Italian seasoning, salt, and black pepper.
- Stir in uncooked rice, beef broth, and Worcestershire sauce.
- Bring to a simmer and cook for 10 minutes.
- Remove from heat and stir in cream cheese, sour cream, and 1 cup smoked Gouda until creamy.
- Transfer mixture to the prepared baking dish.
- Top with the remaining smoked Gouda cheese.
- Cover with foil and bake for 25 minutes.
- Remove foil and bake for an additional 10 minutes until the cheese is melted and lightly golden.
- Garnish with parsley and green onions before serving.
Notes
- Freshly shredded smoked Gouda melts more smoothly than pre-shredded cheese.
- Ground turkey can be substituted for beef.
- Add mushrooms or bell peppers for extra flavor and texture.
- Allow the casserole to rest for 5 minutes before serving.
