Description

Smoked Gouda Beef & Rice Bake is a rich and comforting casserole featuring seasoned ground beef, tender rice, smoky Gouda cheese, and a creamy savory sauce baked until bubbly and golden.

Ingredients

  • 1 lb ground beef
  • 1 tablespoon olive oil
  • 1 small yellow onion, diced
  • 3 cloves garlic, minced
  • 1 cup long-grain white rice, uncooked
  • 2 1/2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon smoked paprika
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 oz cream cheese, softened
  • 2 cups shredded smoked Gouda cheese, divided
  • 1/2 cup sour cream
  • 2 tablespoons chopped fresh parsley
  • 2 green onions, sliced for garnish

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add onion and cook for 3-4 minutes until softened.
  4. Stir in garlic and cook for 30 seconds until fragrant.
  5. Add ground beef and cook until browned, breaking it apart as it cooks. Drain excess fat if necessary.
  6. Season with smoked paprika, Italian seasoning, salt, and black pepper.
  7. Stir in uncooked rice, beef broth, and Worcestershire sauce.
  8. Bring to a simmer and cook for 10 minutes.
  9. Remove from heat and stir in cream cheese, sour cream, and 1 cup smoked Gouda until creamy.
  10. Transfer mixture to the prepared baking dish.
  11. Top with the remaining smoked Gouda cheese.
  12. Cover with foil and bake for 25 minutes.
  13. Remove foil and bake for an additional 10 minutes until the cheese is melted and lightly golden.
  14. Garnish with parsley and green onions before serving.

Notes

  • Freshly shredded smoked Gouda melts more smoothly than pre-shredded cheese.
  • Ground turkey can be substituted for beef.
  • Add mushrooms or bell peppers for extra flavor and texture.
  • Allow the casserole to rest for 5 minutes before serving.
  • Store leftovers refrigerated for up to 4 days.
