Description
A refreshing no-bake dessert made with layers of graham crackers, creamy lemon filling, and fresh strawberries. As it chills, the crackers soften into a cake-like texture, creating a light and flavorful summer treat.
Ingredients
- 2 lb (900 g) fresh strawberries, hulled and sliced
- 2 cups heavy whipping cream
- 8 oz (225 g) cream cheese, softened
- 1 can (14 oz / 397 g) sweetened condensed milk
- 1/2 cup freshly squeezed lemon juice
- 1 tbsp lemon zest
- 1 tsp vanilla extract
- 18-20 graham cracker sheets
- Extra strawberries and lemon slices for garnish (optional)
Instructions
- In a large bowl, beat the cream cheese until smooth.
- Add the sweetened condensed milk, lemon juice, lemon zest, and vanilla extract. Mix until fully combined.
- In a separate bowl, whip the heavy cream to stiff peaks.
- Gently fold the whipped cream into the lemon mixture until smooth and fluffy.
- Spread a thin layer of the cream mixture in the bottom of a 9×13-inch dish.
- Add a layer of graham crackers, breaking them as needed to fit.
- Spread one-third of the cream mixture over the crackers.
- Top with a layer of sliced strawberries.
- Repeat the layers two more times, ending with the cream mixture on top.
- Cover and refrigerate for at least 6 hours, preferably overnight, until the crackers soften.
- Garnish with additional strawberries and lemon slices before serving.
Notes
- For the best texture, chill overnight before serving.
- Use freshly squeezed lemon juice for the brightest flavor.
- The dessert can be prepared up to 24 hours in advance.
- Store covered in the refrigerator for up to 3 days.
- Frozen strawberries are not recommended as they release excess moisture.
