Description

A refreshing no-bake dessert made with layers of graham crackers, creamy lemon filling, and fresh strawberries. As it chills, the crackers soften into a cake-like texture, creating a light and flavorful summer treat.


Ingredients

  • 2 lb (900 g) fresh strawberries, hulled and sliced
  • 2 cups heavy whipping cream
  • 8 oz (225 g) cream cheese, softened
  • 1 can (14 oz / 397 g) sweetened condensed milk
  • 1/2 cup freshly squeezed lemon juice
  • 1 tbsp lemon zest
  • 1 tsp vanilla extract
  • 18-20 graham cracker sheets
  • Extra strawberries and lemon slices for garnish (optional)


Instructions

  1. In a large bowl, beat the cream cheese until smooth.
  2. Add the sweetened condensed milk, lemon juice, lemon zest, and vanilla extract. Mix until fully combined.
  3. In a separate bowl, whip the heavy cream to stiff peaks.
  4. Gently fold the whipped cream into the lemon mixture until smooth and fluffy.
  5. Spread a thin layer of the cream mixture in the bottom of a 9×13-inch dish.
  6. Add a layer of graham crackers, breaking them as needed to fit.
  7. Spread one-third of the cream mixture over the crackers.
  8. Top with a layer of sliced strawberries.
  9. Repeat the layers two more times, ending with the cream mixture on top.
  10. Cover and refrigerate for at least 6 hours, preferably overnight, until the crackers soften.
  11. Garnish with additional strawberries and lemon slices before serving.

Notes

  • For the best texture, chill overnight before serving.
  • Use freshly squeezed lemon juice for the brightest flavor.
  • The dessert can be prepared up to 24 hours in advance.
  • Store covered in the refrigerator for up to 3 days.
