Ingredients
- 1 1/2 lbs sirloin steak
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 3 cups cooked cilantro lime rice
- 2 cups corn kernels, grilled or roasted
- 1/4 cup mayonnaise
- 1/4 cup Greek yogurt
- 1 tablespoon lime juice
- 1/2 teaspoon chili powder
- 1/2 cup crumbled cotija cheese
- 1 avocado, sliced
- 1 cup cherry tomatoes, halved
- 1 cup shredded romaine lettuce
- 2 tablespoons chopped cilantro
- Lime wedges for serving
Instructions
- Season steak with olive oil, chili powder, paprika, garlic powder, salt, and black pepper.
- Grill or sear steak over medium-high heat for 4-5 minutes per side, or until desired doneness.
- Allow steak to rest for 5 minutes, then slice thinly.
- In a bowl, combine corn, mayonnaise, Greek yogurt, lime juice, chili powder, and cotija cheese.
- Mix until the corn is evenly coated.
- Divide cilantro lime rice among serving bowls.
- Top each bowl with sliced steak, street corn mixture, avocado, tomatoes, and shredded lettuce.
- Garnish with chopped cilantro.
- Serve with lime wedges and enjoy.
