Ingredients

  • 1 1/2 lbs sirloin steak
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3 cups cooked cilantro lime rice
  • 2 cups corn kernels, grilled or roasted
  • 1/4 cup mayonnaise
  • 1/4 cup Greek yogurt
  • 1 tablespoon lime juice
  • 1/2 teaspoon chili powder
  • 1/2 cup crumbled cotija cheese
  • 1 avocado, sliced
  • 1 cup cherry tomatoes, halved
  • 1 cup shredded romaine lettuce
  • 2 tablespoons chopped cilantro
  • Lime wedges for serving


Instructions

  1. Season steak with olive oil, chili powder, paprika, garlic powder, salt, and black pepper.
  2. Grill or sear steak over medium-high heat for 4-5 minutes per side, or until desired doneness.
  3. Allow steak to rest for 5 minutes, then slice thinly.
  4. In a bowl, combine corn, mayonnaise, Greek yogurt, lime juice, chili powder, and cotija cheese.
  5. Mix until the corn is evenly coated.
  6. Divide cilantro lime rice among serving bowls.
  7. Top each bowl with sliced steak, street corn mixture, avocado, tomatoes, and shredded lettuce.
