Instructions

- In a separate bowl, whip heavy cream, powdered sugar, and vanilla until stiff peaks form.
- Fold whipped cream into the mascarpone mixture.
- Brush cake layers generously with espresso syrup.
- Spread a thick layer of cookie butter mascarpone filling between the cake layers.
- Frost the top and sides with the remaining filling.
- Dust generously with cocoa powder.
- Garnish with crushed cookie butter cookies.
- Refrigerate for at least 2 hours before serving.
