Ingredients
- For the Peach Filling:
- 4 cups fresh peaches, peeled and diced
- 1/3 cup granulated sugar
- 2 tablespoons brown sugar
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 tablespoon cornstarch mixed with 2 tablespoons water
- For the Mascarpone Cream:
- 16 oz mascarpone cheese, softened
- 8 oz cream cheese, softened
- 3/4 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 1/2 cups heavy whipping cream, whipped to stiff peaks
- For the Cobbler Crumble:
- 1 1/2 cups crushed shortbread cookies or vanilla wafers
- 1/4 cup melted unsalted butter
- 1 teaspoon ground cinnamon
- For Assembly:
- 24 ladyfinger cookies
- 1 cup cooled peach syrup from cooked peaches
- For Garnish:
- Whipped cream
- Fresh peach slices
- Extra cookie crumble
- Ground cinnamon
- Fresh mint leaves (optional)
Instructions
- In a saucepan, combine peaches, granulated sugar, brown sugar, lemon juice, vanilla, cinnamon, and nutmeg. Cook over medium heat for 8-10 minutes until softened.
- Stir in the cornstarch slurry and cook until thickened. Reserve the syrup and allow both the peaches and syrup to cool completely.
- Beat the mascarpone and cream cheese together until smooth.
- Add the powdered sugar and vanilla extract and mix until creamy.
- Fold the whipped cream gently into the mascarpone mixture until light and fluffy.
- Mix the crushed cookies with melted butter and cinnamon to create the cobbler crumble.
- Quickly dip each ladyfinger into the cooled peach syrup and arrange a layer in the bottom of a 9×13-inch dish.
- Spread one-third of the mascarpone cream over the ladyfingers.
- Add half of the cooked peaches and sprinkle with one-third of the cobbler crumble.
- Repeat the layers, finishing with the remaining mascarpone cream.
- Top with whipped cream, fresh peach slices, extra crumble, and a light dusting of cinnamon.
- Refrigerate for at least 6 hours, preferably overnight, before serving.
Notes
- Use ripe but firm peaches for the best texture.
- Allow the peach mixture to cool completely before assembling.
- Do not oversoak the ladyfingers to maintain their structure.
- Chilling overnight gives the dessert the best flavor and texture.
